Salty Summer Daze...     

Welcome to our first e-newsletter of 2021. To celebrate a brand New Year, we've packed it full of salty goodness to help take you through the long, hot summer days and evenings.

This summer has been cooler and wetter (even for Tassie!) than usual, but we are finally starting to see the return of the sun and warmer conditions, which are ideal for harnessing the naturally occurring solar and thermal energy that make our salt flakes so special.

This month we are featuring our Pepper Berry Salt Mix. A 100% natural Tasmanian blend of our sea salt flakes with the delicious spicy notes of Tasmanian Pepper Berries. It's a versatile mix that is wonderful with meat...or sweet!

FILLET OF BEEF WITH TASMANIAN PEPPER BERRY

INGREDIENTS
Beef Fillet
Olive Oil
Butter
Tasman Sea Salt with Pepper Berry

METHOD

Preheat oven to 180°C

Slather the beef fillet with olive oil, rub Tasman Sea Salt with Pepper Berry into the meat and then leave to rest for 30 minutes.

Heat olive oil and butter in an oven proof pan until butter starts to foam, then add the beef fillet and cook on all sides for 15 minutes until meat is browned all over.

Put the pan with the fillet into the oven and cook for another 20 minutes before taking out to rest for at least 10 minutes before serving.
