INGREDIENTS

Calamari
100g plain flour
50g semolina flour
Tasman Sea Salt with Pepper Berry
Oil for frying
Lemon wedges


METHOD

Clean and wash the calamari. Slice down the length of the calamari to make one large piece and cut into triangles.

Soak calamari in milk for half an hour.

Meanwhile, mix the flours together and add spices and salt. Dredge the calamari pieces in the flour.

Heat oil in a deep fryer or a saucepan and when hot fry the calamari in batches.

Sprinkle with Tasman Sea Salt and Pepper Berry and serve with lemon wedges.
